Sight & Mind: Promoting Healthy Foods in School Cafeterias

When in a hurry, convenience and visibility is king. Kids and adults alike tend not to consider what they want for lunch until entering a cafeteria or restaurant. This means it is often what is most visible or the easiest to reach that is selected. Professor David Just, PhD of Cornell University's Smarter Lunchrooms Movement will discuss the psychology of choice and how we can use these simple principles to make the healthy choice the easy choice.
