Our project revealed that existing definitions of food deserts are not sufficiently sensitive to the nature of grocery travel behavior among rural residents. Our research suggests that rural residents employ a range of strategies to overcome the challenge of living at some distance from grocery outlets (from pantry-stocking to trip-chaining) that challenge the current and overly-simplistic assumption of a 10-mile straightline buffer from a food outlet.
