Consumer Food Waste Community of Practice

Ohio State University and Rutgers Cooperative Extension have teamed up to create a Community of Practice focused on tackling consumer food waste. This initiative provides a platform for individuals committed to reducing food waste to connect, share resources, and brainstorm solutions.

January Webinar: Food Safety

The January webinar of the Consumer Food Waste Webinar Series was held on Monday, 1/13/2025. This webinar was on food safety and featured two speakers: Dr. Ellen Shumaker, Director of Outreach for the Safe Plates program at North Carolina State University and Rachael Jackson, founder of EatOrToss.com.

Dr. Ellen Shumaker began the webinar by explaining the Safe Plates program. A program that utilizes observational research and qualitative data to provide trainings, educational programs, and other food safety programming. Dr. Shumaker provided the audience with an overview on foodborne illness and why programs like the Safe Plates program exist.

Following Dr. Shumaker, Rachael Jackson talked about another program that exists to educate others on food safety and prevent foodborne illness. Rachael shared how her website EatOrToss.com allows her to answer food safety questions from people all over the world. She explained how she refers to evidence-based information and food scientists to write articles about a variety of food-related topics.

The next webinar of this series will be on Washington State’s food waste reduction efforts on 2/10/2025 at 12:30pm ET. We will feature Jade Monroe, Food Center Lead at the Washington State Department of Ecology. We hope to see you then!
