In September, USDA-FSIS issued revised guidance about controlling Listeria monocytogenes in ready-to-eat meat and poultry products, available here: http://www.fsis.usda.gov/PDF/Controlling_LM_RTE_guideline_0912.pdf.

On this webinar, food safety scientists Catherine Cutter and Martin Bucknavage, from Penn State University, will explain the revised guidance document and what you need to know to comply.
